What do you mean by "A D E" are the root notes of a minor? I thought A C E were the root notes of A minor?

No.... A C and E are the notes of an A Minor chord. C and E in this case are not the Roots, they are the 3rd and 5th respectively of that chord. Am Dm and Em are the Minor chords in Am and therefore A D and E are the roots of those chords since the names have those notes in the title, they are the roots of those chords. (a slight simplification, but essentially true)
